Mid-Autumn Festival 2025: How To Make Your Own Traditional Mooncake At Home

What Are The Ingredients That You Need?
1. For the dough:

70g golden syrup

½ lye water
-
25g peanut oil
-
100g all-purpose flour
2. For the fillings:

Red bean, lotus seed or salted egg yolk paste
3. Others:

1 egg yolk

How To Make The Mooncake?
Step 1: Make The Dough
To make the mooncake dough, mix and whisk golden syrup, lye water, and peanut oil in a mixing bowl.
Then, add in the sifted all-purpose flour onto the mixture above and start kneading it into a dough.
Once the dough reaches the correct consistency, cover it and let it rest for at least 1 hour in the refrigerator.
Tip #1: Your dough should be soft and smooth, but not sticky.
Step 2: Prepare The Fillings
For the fillings, you can go for the usual options, such as red bean, lotus seed, or salted egg yolk paste.
Feeling extra? Add fruits, chocolates or cake bites inside your filling!
Shape your fillings into a ball, making sure the weight is equal for each one.
Tip #2: Lightly oil your hands to prevent the filling from sticking.
Step 3: Shape The Mooncakes
For this process, you’ll need your mooncake mould to be ready.
First things first, flatten your mooncake dough and wrap it around the filling of your choice.
Then, roll it into a big ball and place it inside your mooncake mould.
Tip #3: Pop it out gently from the mould to avoid ruining the mooncakes.
Step 4: Bake Until Golden Brown
For the last step, preheat your oven to 180°C for a few minutes and bake your mooncakes for about 10 minutes.
Remove the mooncakes and let them cool for another 10 minutes. This step helps to give shape to your mooncakes.
Then, brush your mooncakes lightly with egg yolk and bake them again for another 10 to 15 minutes until golden brown.
Tip #4: Mooncakes taste even better after resting for 1–2 days, allowing the flavours to fully develop.
